A monovarietal Pinot Nero, harvested by hand in the del Casolare vineyard at the Badenigo farm when the combination of maceration on the skins and the seeds has reached a good compromise. The grapes are vinified in cement vats without temperature control and the maceration varies according to the tannic release of the grapes. Malolactic fermentation and élevage take place in small oak barrels for a few months. Bottled in the spring following the harvest, it is then aged in glass.
