I.G.T. Rosso Emilia
Produced with hand-harvested Barbera grapes from the Lunga vineyard at the Solana farm when acidity and freshness are pronounced. The grapes are vinified in a cement vat, without temperature control, for a week. In November, around 10% of Croatina dried in the cellar on mats is added to the fermented and limpid Barbera, followed by a second fermentation and ageing for another four months. It is then bottled directly from the concrete tank.
